hey grandma.

This past week, I made Zach an apricot nectar cake since I was going to be gone for several days with work. As I was taking the cake out of the oven he informed me of the following: 

"You're going to make a good grandma one day"

When I asked why, I was informed that its because I can cook good cakes, casseroles and such. Then he added in that sometimes I act like one. 

Oh dear husband, luckily I love you so and don't find being called a grandma offensive, especially since he acts like a grandpa :) 

I love how adorable my husband is and that he appreciates my cooking.

Yummy enchiladas!

My husband loves Mexican food. Prior to getting married it was our Friday night ritual. However, its been crazy busy around here lately and we haven't found "our spot" for local Mexican since moving to Franklin. This is on our to-do list.

Currently, Zach and I are in attempts of eating in and healthy (or lighter we should say). So, since we were going home Saturday and new all attempts at healthy eating would be out the window with parties galor to attend, we decided on a healthy dinner night in. I had found a healthy enchilada recipe online and thought we would give it a try.

 

I ate the proper serving of one and couldn't eat anymore from being stuffed. Zach on the other hand loved them so that he ate 3! Overall the enchilada's were a success. They were pretty easy to make and delicious!

Happy 80th Birthday Gam Gam!

Today is my fabulous grandmother's 80th birthday. She goes by grandma, but got the nickname Gam Gam as a joke a few years ago. She is a precious southern lady that loves flowers and birds. She always makes me laugh!

Now back to work on my assignment from mom for her birthday party- a fabulous homemade photo video collage. I swear, I have this down after making so many for funerals/birthdays for both mine and Zach's family. 

The scanner and old photos are calling my name :)
